
Ingredients
- 1 1/2 cups of flour
- 2 tbsp granulated sugar
- 3 tsp baking powder
- 1/2 tsp salt
- 1 egg, beaten
- 1 3/4 cup soy milk
- 2 tbsp oil
Yield: 6-8 pancakes
Sift together the flour, sugar, baking powder and salt. In a separate bowl, combine the egg, soy milk, and oil.
Blend liquid into dry ingredients and beat until almost smooth. Heat the griddle and grease lightly. Pour about ½ cup batter per pancake onto hot griddle and bake until surface is covered with bubbles. Turn and bake until golden brown.
