
Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup rolled oats
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 eggs
- 1/4 cup cooking oil
- 1/4 cup soy milk
Yield: 12 muffins
Preheat oven to 400o.
In a large bowl, whisk together the flour, oats, sugar, baking powder, baking soda and salt. Make a well in the centre.
In a separate medium sized bowl, beat eggs until frothy. Mix in oil, soy milk and mashed bananas. Pour into well. Stir just to moisten. Batter will be lumpy. Fill greased muffin tins ¾ full. Bake for 20-25 mins.
Serve with a side of fruit for a light breakfast.
