Chip Oatmeal Cookies

These cookies are simply delicious with a glass of oat milk. Bake 5-8 additional minutes for a more crispy cookie than pictured.

Ingredients

  • 1 cup Earth balance
  • 1/4 cup Granulated sugar
  • 3/4 cup Brown sugar
  • 1/2 cup Boiling water
  • 1 tsp Baking soda
  • 2 cups Rolled oats
  • 1/2 tsp Salt
  • 1 1/2 cups Flour
  • 1 cup Chocolate chips

Yield: 2 dozen oversized cookies or 3 dozen medium sized cookies

Preheat oven to 350o.

Cream the Earth balance and sugars. Add the boiling water and baking soda. Blend in the remaining ingredients. Drop onto a lined baking sheet. Bake for 12-15 minutes. For crispier cookies, cook a little longer.
