I worked on this recipe a few times before deciding it was just right. The brown sugar in place of the white sugar helps with depth in taste, moisture and colour. Grandma called for raisins but our family much prefers walnuts. Both varieties are pictured.

First Ingredients
- 3 cups grated zucchini
- 5 1/4 cups flour
- 3 tsp baking powder
- 3 tsp baking soda
- 1 tsp salt
- 3 tsp cinnamon (or more to taste)
Second Ingredients
- 1 1/4 cup oil
- 1 1/2 cups brown sugar
- 1/2 cup granulated sugar
- 5 eggs
- 1 cup chopped walnuts or raisins (optional)
Yield: 2 loaves (9” x 5” pans)
Preheat oven to 350o.
Mix the first set of ingredients together. In a second bowl, mix the second set of ingredients then add to the dry ingredients. If adding walnuts or raisins, mix them in now. If the mixture seems a little dry, add some soy milk (it depends on the zucchini).
Pour into 2 loaf pans, greased. Bake for approximately 1 hour or until a toothpick comes out clean.
