Grandma’s recipe book was surprisingly missing this childhood favourite.
- 1/3 cup Earth Balance
- 1 bag of vegan marshmallows (10 oz), I use Dandies brand
- 1/2 tsp vanilla
- 4 cups crispy rice cereal (Rice Krispies are an obvious choice)
- 1/4 cup chocolate chips (optional)
Yield: approx. 9 servings
Line or grease a 7×9 baking dish and set aside. Chop marshmallows into smaller pieces with a non-serrated knife.
In a large pot, melt the Earth Balance and then add the marshmallows. Stir constantly until the marshmallows form a mostly-single consistent blob (this will take 5-10 minutes). Remove from heat and add the vanilla.
Mix in the cereal, one cup at a time, with a silicone spatula.
Press the cereal mixture into the prepared baking dish and smooth the top. While the cereal mix is still warm, sprinkle chocolate chips on top and press in, gently. Let cool, slice and serve.
