I can remember my mom making these – as soon as I took the first bite I was reminded of a time we made them for one of my brother’s school bake sales. They are a bit softer than your traditional marshmallow-based crispy rice treat but I kind of like that. Given how sweet these are, I chose to forgo the icing that my mother’s recipe called for.

Ingredients
- 2/3 cup sweetened condensed coconut milk
- 1/4 cup peanut butter
- 1/4 cup light corn syrup
- 1/4 cup brown sugar, packed
- 1/2 tsp salt
- 4 cups crispy rice cereal
Yield: 9-12 squares
Cook all ingredients, except the crisped rice cereal in a large pot until well mixed and thickened, stirring constantly. Remove from heat. Add in the rice cereal, stirring to coat. Pack into greased 9×9” pan. Cool and top with icing.
Icing Ingredients
- 1/2 cup chocolate chips
- 2 tbsp peanut butter
Melt the chocolate chips and peanut butter over low heat and spread over the bars.
