I don’t know what I was expecting when I decided to try this recipe – it’s coffee cake’s oaty cousin. This would be a great afternoon cake if you have company coming to visit.

Cake Ingredients
- 1 cup quick oats
- 1 cup boiling water
- 1 1/2 cups packed brown sugar
- 2/3 cup oil
- 2 eggs
- 1/8 tsp salt
- 1 cup flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp nutmeg
- 3/4 cup raisins (or dates)
Topping Ingredients
- 1 tbsp cocoa powder
- 1 tbsp flour
- 1 tsp cinnamon
- 1 tbsp oil
- 1/4 cup brown sugar
- 1/2 cup chopped nuts (walnuts or pecans)
Yield: 9 servings
Preheat oven to 350o
Mix oats and boiling water in a small bowl and let stand. In a large bowl, cream together the sugar, oil and eggs.
In a third bowl, combine the dry ingredients with a whisk. Add the oat mixture into the creamed sugar mixture, mix and then add the dry ingredients. Beat well. Pour into a greased 9” square pan.
In a separate bowl, combine the topping ingredients and sprinkle liberally on top of the batter.
Bake for 30 minutes or until done.
