This was a really fun discovery among Grandma’s recipes. I found this recipe by accident, hand-written on the back of another recipe card. I actually had no idea what I was making when I started out but they turned out chewy (almost gooey) and made me feel like I was eating something healthy on account of all the nuts and dates, even though I surely was not. These would be a great party or bake sale item if you’re expecting anyone who eats gluten free.

Ingredients
- 1 tbsp Earth Balance
- 1/2 cup granulated sugar
- 1 egg
- 1 cup chopped almonds
- 1 cup dates, chopped
- 1 tsp vanilla
- 1 cup unsweetened shredded coconut
Yield: 1-2 dozen.
Preheat oven to 350o
Cream Earth Balance and sugar. Add eggs and vanilla and beat for 1-2 minutes. Blend in the dates and nuts. Form into balls (the “dough” will be a bit loose but should mostly stay together in your hands) and roll to coat in coconut. Bake on a lined cookie sheet for 15-20 minutes.
