This apple cake is moist and delicious. I’ve finished it with a brown sugar frosting in the photo.

Ingredients
- 1 cup granulated sugar
- 1/4 cup oil
- 1 egg, slightly beaten
- 1 cup flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/4 nutmeg
- 1/4 tsp salt
- 2 cups apples, pared and choppled
- 1/2 cup soy milk
- 1/2 cup raisins
- 1 cup chopped nuts (I used slivered almonds)
Yield: 8 servings (9” square pan)
Preheat oven to 350o.
Blend the sugar and vegetable shortening. Add egg. In a separate bowl, whisk together the dry ingredients. Add the dry ingredients gradually to the creamed sugar, alternating with soy milk and chopped apples. Fold in raisins and nuts (slivered almonds were used in the cake pictured but chopped pecans would also work well). Bake in a 9” pan for 40 mins or until a toothpick comes out clean.
