I found this little gem of a recipe, hand-written and tucked in the back of an old recipe box that belonged to my grandma. A tip of the hat to Heather, whoever she is/was, as this was simply divine.

Filling Ingredients
- 4-5 cups chopped rhubarb
- 3/4 cup granulated sugar
- 1/4 cup flour
- 1/2 tsp cinnamon
- 1/2 cup water
Topping Ingredients
- 1 cup flour
- 1/2 cup oatmeal
- 1 cup brown sugar
- 1/2 cup Earth Balance, melted
Yield: 8-12 servings
Preheat oven to 375o
Toss filling ingredients together and pour into a greased 8” casserole dish. In a separate bowl, prepare the topping by mixing all ingredients together. Pat onto the top of the rhubarb mixture. Bake for 35 minutes or until rhubarb starts to bubble.
