This pie does not have a crust per se – it’s a little more like an apple cake in a pie plate. Grandma’s recipe didn’t make a lot of sense so I looked up some Swiss Apple Pie recipes online and adapted one that was the closest to Grandma’s. Thanks to Olga’s Flavour Factory for what became the majority of this recipe.

Ingredients
- 6-8 apples, (peeled, cored and sliced)
- 1 tbsp cinnamon sugar
- 1-2 tsp fresh lemon juice
- 1 tsp vanilla
- 3/4 cup Earth balance (melted and cooled slightly)
- 1/2 cup granulated sugar
- 1/4 tsp salt
- 1 egg, beaten
- 1 cup flour
- 1 tsp baking powder
Yield: 1 pie
Preheat oven to 350o
In a large bowl, sprinkle the apples with cinnamon sugar, Add the lemon juice and vanilla and stir to coat. Fill the pie plate almost to the top with this mixture.
In a separate large bowl, whisk together the Earth balance, sugar and egg until smooth. Add the flour and baking powder and continue to whisk until smooth.
Pour the batter over the apples and smooth it out as much as you can. Bake in the preheated 350 degrees oven for 45-50 minutes, until the apples are baked through completely and the top crust is golden brown.
