Corn and Tomato Casserole

This is an easy side dish recipe that our family enjoyed over rice.


  • 1 1/2 cups corn niblets (canned or frozen)
  • 1 1/2 cups canned diced tomatoes (lightly drained)
  • 1 tsp salt
  • 1 tbsp granulated sugar
  • 3 tbsp Earth balance, melted
  • F.g. pepper
  • 2 tbsp finely chopped onion

Yield: serves 4-6

Preheat oven to 400o.

Mix all ingredients in a well buttered casserole dish. Cover and bake for 40 minutes until bubbling.
