This is an easy side dish recipe that our family enjoyed over rice.
- 1 1/2 cups corn niblets (canned or frozen)
- 1 1/2 cups canned diced tomatoes (lightly drained)
- 1 tsp salt
- 1 tbsp granulated sugar
- 3 tbsp Earth balance, melted
- F.g. pepper
- 2 tbsp finely chopped onion
Yield: serves 4-6
Preheat oven to 400o.
Mix all ingredients in a well buttered casserole dish. Cover and bake for 40 minutes until bubbling.
