Sour “Cream” Frosting

This is a delicious alternative to a cream “cheese” style frosting – it will likely be a thinner frosting which I really like for letting drip over the edges of my carrot pineapple cake.

Ingredients

  • 1/2 cup Earth balance at room temperature
  • 1 tbsp vanilla
  • 3/4 cup Sour Supreme
  • 4-5 cups icing sugar, sifted
  • pinch of salt

Yield: 4 cups or enough to frost 1 double layer 8″ round cake

Cream the Earth balance with the vanilla and sour cream for 2-3 minutes. Add the sifted icing sugar and salt, mixing until combined (at medium speed). Continue to beat another 3 minutes or so until the frosting is smooth.
