These cookies are very reminiscent of brownies – They would be a great after school snack with a glass of oat or other dairy alternative beverage.

Ingredients
- 1 1/2 cups of sifted flour
- 1 cup coarse chopped nuts (I used walnuts)
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 2 oz unsweetened chocolate
- 1/2 cup vegetable shortening
- 1 cup brown sugar
- 1 egg
- 1/3 cup sour soy milk
Yield: 2 dozen cookies
Preheat oven to 425o.
Sift flour first. In a large bowl, whisk together the sifted flour, baking powder, baking soda and salt.
Melt the chocolate over a double boiler and remove from heat.
In a separate bowl (I use the bowl of my stand mixer at this point), cream the shortening, then blend in the brown sugar gradually. Add egg and beat until mixture is light and fluffy. Blend in the melted chocolate.
Add in the dry ingredients, alternating with the sour soy milk. Stir in the chopped nuts at the end. Drop from teaspoon onto greased cookie sheet and bake for approx. 10 min.
