Strawberry Shortcake (Traditional)

These are deceptively delicious! They are similar to a tea biscuit or scone and the perfect base for soaking up strawberry juice and whipped cream.


  • 2 cups flour
  • 1/3 cup granulated sugar
  • 3 1/2 tsp baking powder
  • 1 tsp salt
  • 2/3 cup Earth Balance
  • 1 cup soy milk

Yield: 10-12 biscuits.

Preheat oven to 425o

Sift together the flour, sugar, baking powder and salt. Cut in the Earth balance. Add the soy milk.

Make a soft dough. Roll or pat to ¾” thickness and cut into desired shapes. Place about 1” apart on cookie sheet. Bake for 14-16 minutes or until golden brown.
