This recipe makes a great base for a sponge strawberry shortcake.

Ingredients
- 2 eggs
- ¼ tsp salt
- 1 cup granulated sugar
- 1 tsp vanilla
- ½ cup soy milk
- 1 tbsp Earth balance
- 1 cup flour
- 1 tsp baking powder
Yield: 10 servings
Preheat oven to 350o.
Grease and line an 8” cake pan or spring form pan with parchment paper.
Beat eggs until light and fluffy. Beat in salt, sugar and vanilla. Heat the soy milk and Earth balance to boiling point. Mix flour and baking powder in a separate bowl and then beat into the wet ingredients. Bake in 8” pan for 20-25 mins.
Unmold immediately and let the cake cool completely on a wire rack.
