Sourdough Pancakes

These are a special occasion pancake in our house because of the forethought that needs to go into making them. You need at least 4 days lead time unless you have sourdough starter around, in which case, this is a great recipe to make use of the discard.

Ingredients

  • 1 cup sourdough starter
  • 2 cups flour
  • 1/2 tsp salt
  • 1 tbsp granulated sugar
  • 2 cups water

Yield:

Add the ingredients together to make a stiff paste. It will thin down overnight. Let stand at room temperature overnight.

In the morning, pour int a bowl, all but about 1 cup of the mix. Set this aside until it is needed again.

Add:

  • 3 tbsp oil
  • 1 egg
  • 1 tsp salt
  • 2 tbsp granulated sugar
  • 1 tsp baking soda dissolved in water

Add water if the dough seems too thick. Cook as you would ordinary pancakes.
