Banana Oatmeal Cookies

These cookies are soft and chewy and especially delicious leveled-up with a generous addition of chocolate chips.


  • 3/4 cups sifted flour
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup Earth balance
  • 2 bananas, fully ripe
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 cup rolled oats
  • 1/4 cup chopped nuts
  • 1/4-1/2 cup chocolate chips (optional)

Yield: 2 dozen

Preheat oven to 400o.

Cream Earth balance and gradually add sugar. Continue beating until light and fluffy. Add eggs and beat well. Add mashed bananas and then the rolled oats.

In a separate bowl, sift together flour, baking soda, salt and spices. and nuts. Add dry ingredients to the wet ingredients and mix well. Stir in the nuts and chocolate chips (if using).

Drop by tsp on greased cookie sheet about 1 1/2” apart. Bake for about 15 minutes or until done.
