(Not Your Basic) Bran Muffins

Grandma called these “Basic Bran Muffins” but they are anything but basic. I had no idea what to expect, with the recipe calling for 2 different types of cereal that gets soaked in sour soy milk, but they are surprisingly delicious. The dates are an incredible addition and you get the bonus of happy bowels. Or maybe the bonus is the point?


  • 4 cups sour soy milk
  • 2 cups All-Bran original cereal
  • 4 cups All-Bran flakes
  • 5 tsp baking soda
  • 2 cups boiling water
  • 1.5-2 cups granulated sugar
  • 1 cup Earth Balance
  • 4 eggs
  • 5 cups flour
  • 1 cup raisins
  • 1 cup dates, chopped
  • 1 cup chopped nuts

Yield: 3-4 dozen muffins

Preheat oven to 375o

In a large bowl, prepare your sour soy milk (for each cup of sour soy milk, first measure 1 tbsp of lemon juice or white wine vinegar into a 1 cup measuring cup and then top with soy milk). Set aside for 5-10 minutes. Next, add the original All-Bran cereal until combined. Then add the All-Bran flakes. Set aside while you prepare the remaining ingredients (approx. 10 minutes).

In a medium heat-safe bowl, dissolve the baking soda in the water. In a separate bowl, cream the sugar and Earth Balance. Add the eggs and beat until smooth.

Add the flour, raisins, dates and nuts into the bran mixture and mix well. When water and soda have cooled, add all the ingredients together, mixing until the batter is consistent. Bake for 20-25 minutes or until done.
