This was the third cookie recipe in the family cookbook that I tried that calls for cornflakes. A sweet crispy and crunchy snack best paired with a glass of a cereal “milk”.

Ingredients
- 3 tbsp Earth Balance
- 1 cup sugar
- 1/3 cup flour
- 1/4 tsp salt
- 1 tsp baking powder
- 2 eggs well beaten
- 1 tsp vanilla
- 3 cups crushed cornflakes
Yield: 2 dozen
Preheat oven to 375o.
Cream Earth Balance and sugar. Add eggs and vanilla. In a separate bowl, sift together the flour, salt and baking powder. Mix the dry ingredients into the wet ingredients. Stir in the cornflakes. Drop by the teaspoonful on parchment lined baking pan. Bake for 15 minutes (until edges and top are starting to brown). Remove from the pan while hot and let cool on a baking rack.
