Grandma wasn’t kidding when she called these THE BEST. The soft middle, crispy outside with coconut and chocolate chips put these usually “healthy” cookies squarely into the indulgent category.

Ingredients
- 1 1/2 cups Earth Balance
- 3 cups brown sugar
- 4 eggs, beaten
- 2 tsp vanilla
- 2 1/2 cups flour
- 5 cups rolled oats
- 1 1/2 cups shredded coconut
- 1 cup chopped almonds
- 1 cup chocolate chips
Yield: 3 dozen cookies
Preheat oven to 350o Cream Earth balance and sugar. Add eggs and vanilla. Mix dry ingredients together and add 1/4 at a time, mixing well after each addition. Place heaping tablespoon full about 3” apart on greased cookie sheet. Flatten with a floured fork. Bake for 15-18 minutes or until nicely browned.
