These squares instantly reminded me of the 80’s. I don’t think I’ve seen or tasted them since I was a kid – a delicious treat to bring forward from my childhood. The kids loved them!

Base Ingredients
- 1 cup flour
- 3 tbsp granulated sugar
- 2 tbsp melted Earth Balance
- 1 tsp baking powder
- 1 egg
- Half can of crushed pineapple
Topping Layer
- 2 cups shredded coconut
- 1 cup granulated sugar
- 1 tbsp melted Earth Balance
- 2 eggs, well beaten
Yield: 12 bars or squares
Preheat oven to 325o
Mix flour, sugar, Earth Balance, baking powder and egg in a stand mixer until it is crumbly. Spread on the bottom of a 8” square baking tin and cover with the crushed pineapple. In a separate bowl, mix together the topping ingredients and spread over the base. Bake for 35 minutes or until the coconut is evenly lightly golden coloured on top. Let cool in the pan for at least 10-15 minutes before cutting and serving.
