Sometimes simple is absolutely perfect. This simple recipe is one that I didn’t tinker with almost at all – Grandma’s recipe even called for margarine!

Ingredients
- 1 unbaked pastry shell
- 3 eggs
- 2/3 cup granulated sugar
- 1 cup corn syrup
- 1/3 cup Earth Balance, melted
- Dash of salt
- 1 tsp vanilla
- 1 cup pecan halves
Yield: one 9” pie
Preheat oven to 350o
Beat eggs with sugar, corn syrup and melted Earth balance. Add a dash of salt and vanilla. Add pecans. Pour into pie shell. Bake for 50 minutes or until knife inserted in centre comes out clean. Cool before serving.
