Chocolate Buttercream


  • 4 cups icing sugar
  • 1/2 cup cooca powder
  • 1 cup Earth balance, softened
  • Pinch of salt
  • 1-2 tsp vanilla
  • 3 tbsp soy milk (as needed)

Whisk together the icing sugar and cocoa powder and set aside. Cream the Earth balance in a stand mixer and add the icing sugar/cocoa powder mixture 1 cup at a time. Add salt and vanilla. If the buttercream is too thick, add soy milk, 1 tbsp at a time until desired consistency is reached.
