This was a new recipe I decided to add to this year’s holiday baking list. They are a more savoury treat so if you prefer, you can add another 1-2 tbsp of sugar to the recipe.

Ingredients
- 2 cups sifted flour
- 1/3 cup granulated sugar
- 1/2 tsp salt
- 1 cup Earth balance
- 3 tbsp soy milk
- 2 tsp vanilla
- 2 cups chopped pecans
Yield: 3 dozen
Preheat oven to 325o.
Sift together the flour, sugar and salt. In a separate bowl, cream Earth Balance, then add the sifted dry ingredients. Mix well. Add milk, vanilla and nuts. Mix thoroughly. Roll into small balls, place on a buttered baking sheet and bake at 325 for 35-40 minutes. While still warm, roll in granulated or icing sugar.
As an alternative, you can roll the balls in coarse white sugar before baking (as pictured).
