My kids love these – the sweet bites with plenty of chopped dates trick us all into thinking we’re eating a treat, but are getting quite a good amount of fibre.

Ingredients
- 1/4 cup Earth Balance, melted
- 1/4 cup brown sugar
- 1 cup sour soy milk
- 1 egg well beaten
- 1 cup flour
- 1 tsp baking soda
- 1 tsp baking powder
- F.g. salt
- 1 cup bran cereal (flakes or buds)
- 1/3 cup chopped dates
Yield: 1 dozen medium sized muffins
Preheat oven to 375o
Mix together Earth Balance and brown sugar.
In separate bowl, mix and sift dry ingredients. Quickly add and mix in the Earth Balance and brown sugar, then the sour soy milk. With a spoon, mix in the bran then the chopped dates and pour into greased muffin tins and bake for 20 minutes.
These muffins are delicious if split while hot and spread with Earth Balance or plant-based creme cheese.
