This was another of those recipes where I didn’t know quite what I was making until I was done. Growing up I used to LOVE the “Dad’s Oatmeal Cookies” – crunchy, salty, sweet. I could nosh on a half dozen without noticing. These remind me of those.

Ingredients
- 3 cups rolled oats
- 2 cups flour
- 2/3 cup brown sugar
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 cup melted Earth balance
- 1/2 – 3/4 cup sour soy milk
Yield: 3 dozen cookies
Preheat oven to 350o.
Whisk together the dry ingredients, then incorporate the melted Earth Balance. Add 1/2 cup of sour soy milk to bring the dough together into a ball. If needed, add more sour soy milk.
Divide the ball in two. Roll each ball on a floured surface until you have two long logs. Cut into thin slices and place on a baking sheet lined with parchment paper. Bake 20-25 minutes, until golden brown and crisp.
