A hearty muffin that’s perfect for breakfast on the go.

Ingredients
- 3 cups flour
- 1 cup granulated sugar
- 2 tsp baking soda
- 3 tsp cinnamon or pumpkin pie spice
- 1/2 tsp salt
- 1 cup mashed banana
- 4 eggs
- 1 cup oil
- 2 tsp vanilla
- 1 apple, peeled and grated
- 1/2 cup chopped nuts
- 1 cup grated carrot
- 1/2 cup raisins (optional)
- 1/2 cup shredded coconut
Yield: 2-3 dozen muffins
Preheat oven to 375o
Mix flour, sugar, baking soda, cinnamon and salt. In a separate bowl, beat the banana, eggs, oil, and vanilla. Add the remaining ingredients except the flour mixture. Then stir in flour mixture and beat well.
Pour into large angel food pan or 2 loaf pans (well-greased and floured). Alternatively, pour into baking cups to make muffins. Bake for 50-60 minutes or until toothpick inserted comes out clean.
