This was a delightful find among Grandma Donna’s recipes. It made me think about the time, not so long ago, where housewives would be expected to have freshly baked goods in the house in case company stopped by. This would have been one of those types of recipes – easy, light, delicious.
This is lovely with morning tea or coffee and would make a nice muffin as an alternative presentation.

Ingredients
- 1 cup boiled water
- 1 1/2 cups raisins
- 1 1/4 cups Earth balance
- 2 cups brown sugar
- 4 cups flour
- 2 cups sour soy milk
- 1 tsp cinnamon
- 1 tsp allspice
- 1/4 tsp salt
- 2 tsp baking soda
Yield: 1 large pan 12”x4”
Preheat oven to 350o.
Soak raisins in boiled water for 5-10 minutes or until plump. While soaking, move on to the next step.
In a large bowl, cut the Earth Balance into the and flour and set aside. Reserve 1 cup of the crumbs for the topping.
Strain the raisins. Add the raisins to the larger amount of the crumb mixture, then combine the spices, salt, and sour soy milk. Beat well. Pour into a large cake pan lined with parchment paper. Sprinkle the top with the remaining crumb mixture. Bake for 45 minutes or until done.
This cake which will keep moist for some time.
