A soft cookie with a bit of a crunch. Don’t be fooled by the darker colour of these cookies – they contain brown sugar (they are not overdone).

Ingredients
- 3/4 cup vegetable shortening
- 1 cup brown sugar
- 1 egg, beaten until fluffy
- 2 cups flour
- 3/4 tsp salt
- 1/2 cup nuts
- 1/2 cup shredded coconut
- 1 tsp baking soda
- 1 tsp vanilla
- 1/2 cup maraschino cherries (cut in half)
Yield: 2-3 dozen
Preheat oven to 375o.
Cream shortening with brown sugar. Mix in the remaining ingredients except for the maraschino cherries. Spoon onto baking pan and press a half cherry lightly into the middle of each cookie. Bake for 12-15 minutes or until the edges start to turn golden brown.
