These were a hit when I was a teenager – reminiscent of shortbread, being dense and buttery, these are a real crowd pleaser.

Ingredients
- 3 3/4 cups flour
- 3/4 tsp baking soda
- 1/4 tsp salt
- 3/4 cup brown sugar
- 3/4 cup granulated sugar
- 1 1/2 cups Earth balance
- 3 eggs, beaten
- 2 tsp vanilla
- 3 cups chocolate chips
Yield: 3 dozen cookies
Preheat oven to 375o
Combine and set aside flour, baking soda and salt. Cream together the sugars and Earth balance. Add the eggs and vanilla to the mixture.
Add the dry ingredients to the creamed mixture. Mix in 3 cups of chocolate chips. Bake for 10-15 minutes, until edges are browned. If you prefer cookies to spread, flatten them with the back of the spoon before baking.
