This was a huge hit in our house. This is another of Grandma Donna’s recipes where I was pleasantly surprised by the result of a few simple ingredients. The crust is a bit sweet and crunchy but the inside is soft and moist and the top is very reminiscent of a cinnamon bun. This would be a great “gifting” cake. In the loaf pictured, I chose not to marble the dough.

Bread Ingredients
- 3 cups flour
- 1 1/3 cup granulated sugar
- 3 tsp baking powder
- 3/4 tsp baking soda
- 2 tsp cinnamon
- 1 tsp salt
- 1 1/3 cup sour soy milk
- 1/4 cup oil
- 3 eggs
- 3 tsp vanilla
Topping Ingredients
- 3 tsp Earth Balance
- 3 tbsp granulated sugar
- 1 1/2 tsp cinnamon
Yield: 1 large 9” loaf
Preheat oven to 350o.
In a stand mixer bowl, measure all ingredients in the order given and beat on medium high for 3 minutes, until smooth. Pour into a greased loaf pan. Smooth top.
For the topping: in a separate bowl, melt the Earth Balance. Mix in the sugar and cinnamon and drizzle over the cake.
Optional: Using knife, cut into the dough with a swirling motion to give a marble effect. Bake for 60 minutes or until knife comes out clean. Remove to rack to cool.
