Grandma Donna made this a few times for me when I was a kid and I just loved it. I always wanted her to make it again when I went to visit.

Ingredients
- 1/2 cup Earth balance
- 3/4 cup granulated sugar
- 1 egg
- 1 tsp vanilla
- 1 cup sour supreme or soy yogurt
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1 tbsp baking powder
Toppings
- 1/4 cup brown sugar, packed
- 1 tsp cinnamon
Yield: 12 servings
Preheat oven to 350o.
Cream Earth balance and sugar. Add egg and vanilla.
In a separate bowl, whisk the dry ingredients. Then add the dry ingredients to the wet, alternating with the Sour Supreme. Beat well. Place half of the mixture in a greased 8” pan.
In a small bowl, mix together the brown sugar and cinnamon.
Sprinkle 1/2 the topping on the batter in the pan. Spread the rest of the cake batter over the topping and then sprinkle the remainder of the topping on the very top. Bake for 50 mins or until done (toothpick comes out clean).
