I had never had a piece of gingerbread before making this recipe. Of course I’ve eaten gingerbread cookies of all varieties but as an actual *bread*? Never. It’s a rich, spiced bread that would be great as a morning snack and would be a great gifting loaf in the Fall.

Ingredients
- 3/4 cup Earth Balance
- 1 cup brown sugar
- 1/2 cup molasses
- 1/2 cup honey
- 3 well beaten eggs
- 2 3/4 cups flour
- 1 tbsp ginger
- 2 tsp cinnamon
- 1 tsp nutmeg
- 1/2 – 1 tsp cloves (to taste)
- 3/4 cup warm water
- 2 1/2 tsp baking soda
Yield: 1 loaf (9″ loaf pan)
Preheat oven to 325o.
Cream Earth Balance and add brown sugar gradually. Beat until well combined then add molasses, honey and well beaten eggs.
In a separate bowl, sift dry ingredients and add to the wet ingredients alternating with the hot water in which the baking soda has been dissolved.
Bake in a large loaf pan which has been lined with parchment paper then sprayed with cooking oil. Bake for 1 hour. This is a very rich loaf and is delicious served warm with melted Earth Balance, apple sauce or whipped coconut cream.
