This delicious, understated gem of a recipe really surprised our family – in a good way! It was gone within days. Next time around I would like to experiment with pieces of fresh apple in the batter and streusel.

Loaf Ingredients
- 3/4 cup Earth Balance
- 1 cup granulated sugar
- 1 large egg
- 2 1/4 cups applesauce
- 2 1/2 cups flour
- 3 tsp baking powder
- 1/4 tsp salt
- 1 1/2 tsp baking soda
- 2 1/4 cups All-Bran
Streusel Ingredients
- 1/2 cup brown sugar
- 3 tbsp Earth Balance, melted
- 1 1/2 tsp cinnamon
- 1 tsp cloves
- 3/4 cup walnuts, pecans, or sunflower seeds (chopped)
Yield: 9” loaf
Preheat oven to 350o
Cream Earth Balance and sugar. Add egg and applesauce. In a separate bowl, whisk together the flour, baking powder, salt and baking soda. Add to the wet ingredients. With a spoon, mix in the bran cereal.
In a separate bowl, mix together the streusel ingredients.
Put half the batter in bottom of greased loaf pan. Spread 2/3 of the streusel mix over the batter. Carefully spread the other half of the batter over the streusel and sprinkle the remaining streusel on top. Bake for 50-55 minutes or until a toothpick inserted comes out clean.
Alternatives:
Instead of applesauce, 1 cup pumpkin puree and ½ cup mashed bananas
